Perfectly balanced with a musty complex acidity to make it useful in both dressings and cooking. Bursting with sweet cherry and raisin flavours, with an underlying richness imparted through notes of cedar. Much thicker in texture than the previous two Balsamics, the vinegar has achieved a great depth of flavour—deglaze a steak pan with it and a little stock or water for a beautiful gravy. Also unsurpassable with ripe figs and Parma ham.
