Ortiz Cantabrian anchovy fillets in olive oil bring deep, savoury flavour to tapas, salads and simple suppers. Sourced daily from auctions along Spain’s north coast, the anchovies are processed the same day and salt-cured for 6–12 months, depending on their size.

Once matured, they are gently washed to remove excess salt, then trimmed and filleted by hand. Serve on buttered toast, add to a tomato salad or stir into a warm pasta sauce for an extra layer of savoury depth.
