Tirrena is a semi-whole durum wheat semolina pasta made from three types of ancient grain - Senatore Cappelli, Khorasan and Evoldur.
The pasta is bronze drawn and slowly dried for at least 72 hours at temperatures below 38°C. This gives the pasta its hazelnut colour, high digestibility and ability to absorb flavours. Tirrena is rich in fibres, polyphenols and vitamins.
