Furikake Fries Recipe
Our Flank Steak is on special offer this week. Lean and full of flavour, it’s ideal for marinating, cooking whole and slicing to serve. For a different take on steak and chips, try these Japanese-style furikake fries: crisp matchstick potatoes with a sticky honey sauce and a generous scattering of nori, sesame and chilli seasoning.

Ingredients
For the seasoning mix
2 nori sheets
6 tbsp garlic granules
2 tsp chilli flakes
3 tbsp white sesame seeds
1 tbsp black sesame seeds
For the fries
1kg potatoes, preferably large baking potatoes
1.5 litres vegetable oil, for frying
For the sticky sauce
2 tbsp honey
1 tbsp fish sauce
1 tbsp oyster sauce
Method
1. Put the nori sheets, garlic granules and chilli flakes into a food processor. Blitz until the nori is finely broken up, then transfer to a bowl and stir in the white and black sesame seeds. Set aside.
2. Thinly slice the potatoes, then cut into fine matchsticks. Place in a bowl of cold water while you prepare the oil. Have a clean tea towel ready to dry them thoroughly before frying.
3. Heat the vegetable oil in a large, deep saucepan, keeping the pan no more than half full. Carefully test with a small piece of potato: it should sizzle and rise to the surface. Hot oil can be dangerous, so never leave the pan unattended.
4. Preheat the oven to 180°C/160°C fan/gas 4. Line two baking trays with kitchen paper to drain the fries, then transfer the drained fries to an unlined ovenproof tray to keep warm.
5. Drain and thoroughly dry a handful of potato matchsticks. Carefully lower them into the oil and fry for about 3 minutes, until golden and crisp. Work in small batches without overcrowding the pan. Lift out with a slotted spoon, drain on the prepared trays, then keep warm in the oven. Repeat with the remaining potatoes.
6. Transfer the cooked fries to a serving dish.
7. Mix the honey, fish sauce and oyster sauce together. Drizzle over the fries and toss gently to coat. Sprinkle generously with the seasoning mix and serve straight away.
To serve
Serve alongside sliced flank steak for a Japanese-style twist on steak and chips. Scatter over the seasoning just before serving to keep the fries crisp.
