Roasted Sweet Potato Cubes Recipe

To accompany our gorgeous Breaded Chicken Escalopes, which are on special offer this week, we have found an easy and tasty dish to go alongside, Enjoy!
INGREDIENTS
700g pounds sweet potatoes peeled, cut into ½-inch cubes
3 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
Parsley or coriander optional
METHOD
1. Preheat the oven to 400℉.
2. Combine the sweet potato cubes with the olive oil in a large bowl. Toss until well coated. Sprinkle in the salt, black pepper, and any other seasonings you're using, and toss until well combined.
3. 1 ½ pounds sweet potatoes, 3 tablespoons olive oil, 1 teaspoon salt, ½ teaspoon black pepper
4. Line a large baking sheet with parchment paper and spread the sweet potato cubes out in a single layer. Bake for 25-30 minutes, flipping halfway through, or until the potatoes are tender and the edges begin to brown.
5. Serve the sweet potato cubes with additional salt, pepper, and fresh herbs, if desired.
