Broccoli & Beef Pattani Salad Recipe

This week’s special offer is a rich, tender Wagyu Sirloin which has a delicately sweet flavour. To accompany it, we thought a fresh salad with a bit of heat would contrast nicely. Enjoy!
INGREDIENTS
1 handful cherry tomatoes, quartered
1/2 cucumber sliced into sticks
1 handful fresh chopped coriander
1 tbsp fresh chopped mint
Salt and pepper
1 tsp olive oil, for brushing
For the Dressing
1 tbsp light soy sauce
1 tbsp fish sauce
2 tbsp fresh lime juice
1 tbsp soft brown sugar
2 red chillies deseeded and finely sliced
1 clove garlic finely minced
½ tbsp sesame oil
METHOD
1. Season the steak well with salt and pepper.
2. Brush a griddle pan or frying pan with oil and heat. Add the steak and cook on each side for 2-3 minutes for medium rare or longer for a more well-cooked steak. Once cooked to your liking, transfer to a board and leave to rest for 5 minutes.
3. Lightly blanch the Tenderstem broccoli in a pan of boiling water for 2 minutes, then remove with a slotted spoon and plunge into ice cold water. Drain and set aside.
4. For the dressing, simply whisk all the ingredients together until the sugar has dissolved.
5. Pop the Tenderstem broccoli, tomatoes, cucumber and herbs into a large bowl, pour over the dressing and toss well.
6. Thinly slice the beef and serve with the salad.
