Our Shetland lamb rack comes from purebred native Shetland sheep, a naturally smaller breed. Their diet of grass, heather and seaweed foraged along the shore gives the meat its distinctive sweetness.

For a special supper, try roasting with rosemary and garlic or a herb crust. Rest before carving, then serve with seasonal vegetables and roast potatoes to let the lamb’s flavour take centre stage.
