Butterflied Leg with Pesto

The Butterflied leg is a boned leg of lamb specially prepared so that it stays flat when barbequed on a low heat. An extra subtle flavour and tenderness is added when marinated with pesto and sun blushed tomatoes.
2kg (Minimum Pack Weight 1.980kg)
To Roast: Pre-heat oven to 190ºC, place in baking tray and cook for the following times:
Rare, 15 min per 450g + 15 min
Med, 20 min per 450g + 20 min
Well Done 25 min per 450g + 25 min
Remember to rest for at least 10 minutes before carving
