Vacherin Mont d'Or is a seasonal French cheese from Franche-Comté, made with raw cows' milk from Montbéliard and Simmentaler herds. Production runs from 15 August to 31 March, making it a natural choice for an autumn or winter cheeseboard.
Each cheese is encircled with spruce bark and ripened on spruce boards for at least three weeks, with regular turning throughout. This traditional maturation is central to its distinctive character.
How to serve it
Bring to room temperature before serving, and pair with crusty bread, boiled new potatoes or cornichons for sharing, or serve as the centrepiece of your cheeseboard.
