A smoky and piquant sauce  made with free range eggs and Cotswold extra virgin, cold pressed rapeseed oil. Additional oil is slowly smoked over beech for 5 days in Cotswold Gold's smokehouse.

Bite and acidity from gherkins, pickled onions & Dijon. Balanced with sweetness from roasted red peppers and tomatoes. Background of dill and cayenne pepper.
